Spicy Cilantro Corn Fritters w/ Garlic Lime Guacamole
This is a simple and delicious recipe I created this summer after successfully growing my own cilantro and having some leftover fresh corn- great for a snack...thought I would share for a splash of summer in this wintery season!
Fritters:
2/3 cup white flour
1 Tbsp baking powder
Pinch salt
7 Tbsp water
1 cup fresh corn (cut off the cob) *you can also use canned corn, but fresh will taste better!
1/4 cup fresh cilantro
1-2 tsp cayenne pepper (add more for if you like spicy!)
Heat 1/2 cup of vegetable oil in a sauce pan. Spoon batter into pan to create fritter patties. Let patties fry to crisp on one side, then flip over.
Serve warm with simple guacamole:
Guacamole:
2 Avacados
1tsp garlic powder
Juice of 1 fresh lime
Enjoy!
